Hearty Meatless chili Weight Watcher style!!


Straight out of my Weight Watchers Cookbook!! Hearty Meatless Chili Makes 6 servings Per serving 1 cup : 197 cal, 3g Fat, 10g fiber. 3 points per serving 1 Tablespoon olive oil 1 Large onion 1 green pepper 3 Garlic cloves 1 Jalapeno 1 28oz caned tomatoes 1 (12oz) package frozen soy protein crumbles 1/2 cup water 2 Teaspoons of chili powder 2 Teaspoons oregano 1 Teaspoon cumin 3/4 Teaspoon salt 1 (15oz) can red kidney beans rinsed and drained 1. Heat oil in a pan pr a dutch oven on med heat. add onion, bell pepper, garlic and jalapeno. 2. Add the tomatoes, soy crumbles, water, eggplant, chili powder, oregano, cumin, and salt. Bring to boil. reduce heat and simmer for 20 min. add the beans and simmer for anouther20 min till veggies are tender and enjoy! I like to use my crock pot i think the longer you cook it the better the flavor is. Also i sometimes add a package of chili seasonings. This is also good on rice or lettuce!!
